Wiggly Watermelon

My kids love watermelon and they love Jello, so for todays Memorial Day BBQ I got a little inspiration from, the idea room (of course) who got her inspiration from gourmet mom on the go and combined the two. You can get the recipe here.

It was a big hit with everyone, especially the kids.

So here are a few extra tips:
- Carve out the watermelon a lot. The thinner you get the rind the easy it will be to cut once it is full of jello. When I was cutting it I was wishing the rind was easy to cut through.
-Don't get distracted. I put mine in the fridge and took the kids for a "quick" walk. By the time I got back it was too set up to add the mini chocolate chip seeds.
-I used half sugar free and half regular jello.
- Make use you have plenty of time to let it set up. By the time I got home from the store and got started on this I only had about 3 hours before the BBQ so I did 4 cups boiling water and 1 cup ice water. It didn't hold it's shape as well as I would have liked, but we had like two pieces left the next day and they were really well set up and I was able to cut them nice and thin like I would a normal watermelon.
